Mediterranean Sliders with Pasta Salad
Ingredients:
Mini slider buns / Hawaiian rolls
Ground turkey or beef
Feta cheese
Tomatoes - sliced and choped
Kalamata olives or olive mix - chopped
Baby spinach
Cooked noodles (size and shape of your choice)
Olive oil
Balsamic vinegar
Salt and pepper
Oregano
Instructions:
Sliders -
Form small patties with the ground meat seasoned with salt / pepper and any other seasonings you wish. For a Mediterranean flair, use oregano, mint, or garlic powder.
Grill the patties until cooked through.
Assemble sliders with mini buns, patties, crumbled feta, sliced tomatoes, spinach and a sprinkle of oregano.
Pasta salad -
Cook the pasta in boiling water until your desired softness. Drain and put into a container to cool.
Once the pasta is cool, add in the feta cheese, chopped kalamata olives, chopped tomatoes, chopped spinach, olive oil, balsamic vinegar, and oregano.
Put a top on the container and shake until combined.
**Note: The patties can be shaped and formed as well as slicing the tomatoes prior to going glamping. Put the patties in a container with wax / parchment paper to separate the patties. The pasta salad can be made ahead of time as well.

Cauliflower Crunchy Tacos with Cilantro Slaw and Black Beans
Ingredients:
Cauliflower florets
Taco seasoning
Hard taco shells
Canned black beans
Shredded cabbage / bag of cabbage mix
Chopped cilantro
Lime juice
Greek yogurt or sour cream
Mayonnaise
Salt and pepper
Tajin seasoning
Cojita cheese
Instructions:
Cauliflower -
Toss cauliflower florets in a frying pan.
Add enough water to cover the bottom of the pan.
Add taco seasoning to the top.
Cook until your desired softness and crispiness (once water evaporates).
Black beans -
Add can of black beans to the sauce pan.
Sprinkle in Tajin seasoning and a splash of lime juice.
Cook until beans are warmed.
Coleslaw -
Mix shredded cabbage with chopped cilantro, lime juice, and Greek yogurt /sour cream, and a dollop of mayo.
Add salt and pepper to taste.
Assembly -
Warm the hard taco shells.
Fill each shell with cauliflower and top with cojita cheese and coleslaw.
Put the black beans in a bowl and top with cojita cheese and cilantro.
Note: The cauliflower can be made ahead of time and heated up at the campsite. Also, the coleslaw should be made ahead of time so that the flavors can combine well.

Veggie Green Curry
Ingredients:
Chopped mixed vegetables (such as bell peppers, zucchini, carrots, and broccoli)
Coconut milk
Vegetable stock
Onions - chopped
Green onions - chopped
Garlic - chopped
Green curry paste
Soy sauce or tamari
Fish sauce (or vegan fish sauce for those with allergies)
Rice noodles
Instructions:
Sauté mixed vegetables, onions, garlic, and green onions (save some for topping) in a pan until slightly tender.
Stir in green curry paste, soy sauce or tamari, and fish sauce.
Add in veggie stock and coconut milk.
Break up the noodles in the sauce.
Simmer until the sauce thickens, the vegetables are cooked through, and the noodles are soft and tender.
Garnish with green onions.
Note: All vegetables can be chopped prior to going glamping.
